Ingredients

For the Beef

  • 250g beef tenderloin. Its tender texture makes it the ideal choice for this dish.
  • 1 egg white
  • 1 tablespoon of cornstarch
  • 1 tablespoon of light soy sauce
  • 1 teaspoon of oyster sauce
  • 1 teaspoon of cooking wine
  • A pinch of salt and pepper

For the Sauce

  • 2 tablespoons of black pepper sauce. You can use store – bought sauce or make your own for a more personalized flavor.
  • 1 tablespoon of light soy sauce
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1/2 cup of beef broth
  • 1 tablespoon of cornstarch

For the Vegetables and Aromatics

  • 1 medium onion, cut into chunks
  • 1 bell pepper, preferably green, cut into chunks
  • 3 cloves of garlic, minced
  • 1 piece of ginger, minced

Step – by – Step Cooking Process

Marinating the Beef

  1. Cut the beef tenderloin against the grain into thin strips. This helps to break down the muscle fibers, ensuring the beef stays tender during cooking.
  2. In a bowl, combine the beef strips with the egg white, 1 tablespoon of cornstarch, 1 tablespoon of light soy sauce, 1 teaspoon of oyster sauce, 1 teaspoon of cooking wine, and a pinch of salt and pepper. Mix well until the beef is evenly coated. Let it marinate for 15 – 20 minutes.

Preparing the Sauce

  1. In a separate bowl, whisk together 2 tablespoons of black pepper sauce, 1 tablespoon of light soy sauce, 1 teaspoon of sugar, 1/2 teaspoon of salt, 1/2 cup of beef broth, and 1 tablespoon of cornstarch. Set aside.

Stir – Frying the Beef

  1. Heat 2 – 3 tablespoons of oil in a wok or a large skillet over high heat. When the oil is hot, add the marinated beef strips. Stir – fry quickly to prevent the strips from sticking together. Cook until the beef changes color, about 1 – 2 minutes. Remove the beef from the wok and set it aside.

Stir – Frying the Vegetables

  1. In the same wok, add a little more oil if needed. Add the minced garlic and ginger, and stir – fry until fragrant.
  2. Add the onion chunks to the wok. Stir – fry for 1 – 2 minutes until the onions start to soften.
  3. Add the bell pepper chunks and continue to stir – fry for another 1 – 2 minutes.

Combining and Finishing

  1. Return the cooked beef strips to the wok. Pour the prepared sauce into the wok. Stir – fry continuously over high heat until the sauce thickens and coats the beef and vegetables evenly.

Serving
