Braised Beef

  • Ingredients: Beef, scallions, ginger, garlic, star anise, cinnamon, cooking wine, light soy sauce, dark soy sauce, rock sugar, salt.
  • Steps:
    1. Cut the beef into large – sized pieces and blanch them in boiling water for a few minutes to remove the blood foam. Then take out the beef and rinse it with clean water.
    2. Heat oil in a pot, add scallions, ginger, garlic, star anise, and cinnamon, and stir – fry until fragrant.
    3. Put the blanched beef into the pot and stir – fry evenly. Add an appropriate amount of cooking wine, light soy sauce, dark soy sauce, and rock sugar, and continue to stir – fry to make the beef evenly colored.
    4. Add an appropriate amount of water, bring to a boil over high heat, then turn to low heat and simmer for about 1.5 to 2 hours until the beef is tender. Finally, add an appropriate amount of salt to taste.

Beef with Oyster Sauce

  • Ingredients: Beef tenderloin, oyster sauce, cooking wine, light soy sauce, starch, scallions, ginger, garlic, and vegetable oil.
  • Steps:
    1. Cut the beef tenderloin into thin slices, put them in a bowl, and add an appropriate amount of cooking wine, light soy sauce, and starch. Mix well and marinate for about 15 minutes.
    2. Cut scallions, ginger, and garlic into small pieces. Heat oil in a pan, add scallions, ginger, and garlic, and stir – fry until fragrant.
    3. Put the marinated beef slices into the pan and stir – fry quickly over high heat until the beef changes color.
    4. Add an appropriate amount of oyster sauce and continue to stir – fry evenly so that the beef is coated with oyster sauce. Stir – fry for a few more minutes until the beef is cooked through, and then it can be served.

Mapo Tofu with Beef

  • Ingredients: Beef, tofu, Pixian broad – bean paste, chili powder, Sichuan pepper powder, scallions, ginger, garlic, cooking wine, light soy sauce, starch, and vegetable oil.
  • Steps:
    1. Cut the beef into small cubes, put them in a bowl, and add an appropriate amount of cooking wine, light soy sauce, and starch. Mix well and marinate for 10 minutes. Cut the tofu into small cubes and blanch them in boiling water for 2 minutes to remove the beany smell, then drain the water.
    2. Heat oil in a pan, add scallions, ginger, and garlic, and stir – fry until fragrant. Add the marinated beef cubes and stir – fry over high heat until the beef changes color.
    3. Add an appropriate amount of Pixian broad – bean paste and stir – fry until the oil turns red. Then add an appropriate amount of chili powder and continue to stir – fry evenly.
    4. Put the blanched tofu cubes into the pan and gently stir – fry to make the tofu evenly coated with the sauce. Add an appropriate amount of water, bring to a boil over high heat, then turn to low heat and simmer for about 5 minutes to let the tofu taste.
    5. Mix an appropriate amount of starch with water to make a starch solution, pour it into the pan, and gently stir – fry to thicken the sauce. Finally, sprinkle an appropriate amount of Sichuan pepper powder and scallions on the surface, and then it can be served.
